Heading up to Scotland from Northumberland this Wednesday for about 10 days mostly to do riding but will bag a few Munro's on alternative days, Planning on riding Dunkeld 1st then got Ben Lawyers, Glencoe/Kinlochleven, Fort Bill and Isle of Skye and the Torridons.
Any must do rides north of the Torridons ?

There's nice riding at Laggan and Fort William. Cairngorms too.
You can also do lots in the Tweed Valley - nice and close to Northumberland - can break up the journey up/down for you
There was a thread a month or so ago about riding around the Poolewe area that has lots of suggestions.
The Arkle loop from Lone and round by Bealach Horn would be one worth doing. The Fisherfield traverse is another. The Tollie path as an out and back.
There's surprisingly little high quality riding north of Torridon.
Maybe have a think about how much driving you want to do as currently looks like a driving holiday rather than a riding holiday.
Kinloch and torridon are good bases as there are a few things to do at each location.
What he says, lots of folks planned trips up here on stw seem more driving than fun to me.
Can I recommend that to decrease the driving time but keep the grand day out factor going, instead walk/scramble the Aonach Eagach at Glencoe, Liatach or Beinn Alligin in Torridon and hit the Red Cuillins in Skye. From your itinerary I think you might have more than 10 days worth when you include driving between places.
Scotland is a lot bigger than the weather map suggests.
There are no motorways north of Perth and precious little dual carriageway.
Some of the roads are singletrack AND you have the NC500 traffic to contend with.
I'd knock back the travelling a bit.
