The winter trainer now sports a Niner steel fork. Anyone managed to fit a mudguard to one of these or similar? Photos of how you've done it would be great

I'd of thought you could fit a Mucky Nutz Bender Fender. Personally on my rigid bike I've got a downtube crud catcher and a length of old inner tube wrapped around the stantions to work like a neoguard.
Make one from an old muc off bottle.....like I did for my fatty

Is this for road or off road riding?
I used to have a mucky nutz bender fender on a set of salsa cromoto's, just didn't use the middle strap point. worked fine.
Is this for road or off road riding?
Both - was considering some steel full length with p clips etc but the consequences of something coming adrift and jamming have made me think otherwise.
Mucky Nutz on a Salsa Firestarter fork with no issues here.
Mudhugger are a solid choice that give good coverage.
