I've spent years buying overshoes, and then watching them slowly fall apart. The zips fail, the Velcro fails and the elastic fails. They are like a metaphor for getting older.
This year I have bought some Shimano winter boots. I should have done this ages ago

Every over shoe I've ever had has fallen to bits in between one and three winters.
My Shimano waterproof boots are still better 15 after years of horrible weather.
The waterproof dhb ones have been great on the road bike and might survive their second winter. Mostly because I have a newborn and won't be getting out much :-)
No experience myself, but a guy I ride with is on his second pair that are disintegrating whilst I’m still snug and warm in my waterproof boots that get worn loads in winter.
As already said overshoes just end up falling apart, pain to dry out, only last me around a year and at around £30 a pop are not economical
After 10 years of using them i decided to buy proper waterproof boots, cost £100 and are currently in their 3rd winter and still working fine

If you’re on SPD-type shoes, water will still get in through the cleat slots, but they will add some warmth (and keep your shoes clean).

Mostly survived some (of my) very poor route planning that involved a significant hike up some stupidly steep hills in Wales last winter.
Didn't disintegrate when I mashed the crank off twice.
My feet were still mostly ok despite falling numerous river crossings at sub 5 degrees and falling in.
Tempted to buy some more for when the do pack in.
I also have some seal skins ones that have lights on the heel. I don't wear them as they are an absolute swine to get on over Shimano xc shoes.
I have some planet x "waterproof" fabric ones that shredded very quickly on a MTB but are ok over my road shoes

The Endura ones are pretty good. I wonder how much of the durability complaints come down to the places people ride? Rocky conditions definitely kill them faster than soft, forest conditions.
I reckon I get 4-5 years out of a set of overshoes before the zip dies.
Cleaning and drying them is super easy. Just rinse in the sink/bucket and they dry in very little time.
Overshoes definitely go over traditional MTB shoes better than larger, trainer styles.
BBB also do some good ones.
I'm in the same position as,
a) I can't really afford winter boots
b) even if I could, none of them fit my stoopid wide feet, even the wise-git ones

I'm not enough fond enough of gravel to head out in the rain😄
On One are ok, but only wrap around, not completely sealed. Sealskin have a zip and are a struggle to get on.
I usually get a couple of winters from each pair. Overshoes work for me as I cycle to work and need to walk through the office to get to the shower. I can leave the wet, muddy overshoes on the bike and not leave a trail of mud on the carpet.
Get several sizes larger than your shoe size.

So back to the original question, what MTB overshoes are ok for gravel for helping feet dry
TBH most useful pair I've ever bought have been planet X neoprene jobs with velcro closure (zips will go to shit after a winter in the mud). They'll survive a couple of winters, so long as you're not walking too much.
It's worth having two pairs on rotation if you can because they get saturated and can take a while to dry.
If it was really cold and/or wet I was a fan of putting the shoes on, then wrapping my foot and ankle in cling film before slipping the overshoes on top.
But yeah, cheap and cheerful PX jobbies FTW (I now have some winter boots of course)...
To keep your feet warm and to help stop water coming through the cleat, I used duck tape and cheap wool/foil insoles.
Note that my MT500 shoes covers zip died pretty rapidly when the road salt got to it so give them a quick wash after each wearing.
Another cheapish solution is to use insulated water proof socks. Your shoes obviously get pretty disgusting and wet but you don't have the slippy overshoe material getting in the way when walking or doing a bit of hike a bike.
But as already said, a proper pair of winter shoes is best. Although I think I'll probably wear them from October to March.
Dexshell Heavy Duty - managed to slide them over some mtb SIDIs for a -8 peaks gravel bash last week.
Very well made, use them over road shoes when not using the heavy duty winter boots.
I have some half-price DHB "extreme weather" overshoes on their way from the Chiggle fire sale. I mean, there's no such thing as an overshoe that does what you want it to, they just keep the crap off your shoes and ensure any water that gets in is warm enough not to spoil the ride.
Planet x velcro neoprene overshoes, will cost about £15 and current pair are three years old, a bit tatty now but do the job.
I've got zipless GripGrab ones which you stick on before your shoes then pull down over your toes and heels. Seem OK and seem to seal quite tightly around the shoe. Best ones I ever had were Carnac ones from PX amd they lasted for years. I still use my Das Boots from there when it's really manky outside.

I went through years of buying "good" overshoes (inc Rapha) only for them to fall apart so now I've settled on those Endura ones.
A pair will do one or two seasons on my road shoes before starting to scuff up at which point they go onto my gravel/MTB shoes for another season and that'll finish them off.
Trying to make them last or find super durable ones is just a waste of time. Treat them as a disposable item, buy cheap (ish) and accept that you'll get 3 years or so out of them.
BBB hardwear with PU coating are very waterproof. Used them and the lighter weight ones for commuting for years. Use boots now

They do a new version for gravel/MTB which I reckon could be good.

After killing zips on endura I went for some cheap Planet X ones and they are miles better and have last several winters. Doesn’t look like the exact same ones are there anymore but similar to these
Silicone spray hàs preserved several zips on bike bags for me.
I wonder if it will work on the overshoes?

what size overshoes you looking for? I think I have a set of Endura going spare (yours for the cost of postage). Will have to check still have them - mind are the ones for big feet.

I have had quite a few different brands/pairs over the years, dhb, endura etc. Nothing has lasted other than a pair of ugly looking things I purchased from from planet x many years ago, they are indestructible.

You're sorted now but a mud flap is a great addition to a front mudguard which would keep you cleaner. Depends on the bike but mine is 8cm off the ground.
