i've had my Genesis CdF since 2018 and would like to move to full hydro disks but as you already know, this is far from straight forward.
The forks have IS mounds so I understand that I would have to buy the shifter and caliper seperately, so the job has instantly become expensive.
There is also doubt as to whether I want to continue with the Tiagra group set but it also seems that I can't incrementally move over here due to 10s and 11s compatability between Tiagra and 105.
Is Shimano GRX 2 x 10 speed a goer here. I could start with new shfiters/levels and IS mounnded capipers and upgrade the rear mech with a GRX 10 speed rear mech and then slowly move over the remaining Tiagra components to GRX at leisure?
I am okay with the tiagra front mech but would like something a bit more robust for the rear.
Or do I need to suck it up and move entirely to 105 (or an SRAM offering which I assume I would evaluate if I was getting an entirely new GS)

I don't see why not. I fitted the GRX400 2x10-speed hydro levers and used them with some XT mountain bike calipers I had lying around. Shimano disc brakes seem to be pretty much mix and match compatible, which may make your life easier.
You also need the GRX 10-speed mech as the pull ratio on the levers is the same as 11-speed Shimano rather than the older 10-speed groupsets bar the latest Tiagra, I think. But I'm pretty sure @crazy-legs of this parish has a similar set-up but with a 9-speed XTR rear mech and it works fine. The GRX mech is good and has a clutch, which is nice. About 50 quid.
You may also need to change your front mech, but a CX70 one, which was what I had already, works fine. It's worth the hassle btw, massive improvement over cable disc brakes.
What version of tiagra are you using?
EDIT - I looked it up. Looks like the 2018 CdF uses Tiagra 4700. This is the odd ball of shimano road 10 speed in that it uses the cable pull ratio from road 11 speed. you can, therefore, use both your tiagra front and rear mechs with 11 speed shifters and an 11 speed cassette should you desire...
EDIT again - which is exacty my set up. R8000 11 speed shifters, 105 11 speed cassette, tiagra 4700 front mech, tiagra 4700 rear mech.
As @BadlyWiredDog says, I've just done something similar with my CX.
It was getting to the point of needing a complete overhaul so I stripped it down to bare frame.
It was running:
Ultegra 6700 10sp STI
Hope V-Twin
Hope calipers
10sp XT cassette and a 9sp XTR M972 rear mech (which, due to the cable pull ratios worked fine with the 10sp Ultegra levers).
Sold the levers and the V-Twin setup. Bought GRX400 STI levers (2x10sp) and some Shimano XT calipers. My frame was post-mount so they worked fine without needing adaptors. You can get all sorts of frame / disc adaptors, Chain Reaction have pages of them and they're not *that* pricey - check very carefully exactly what you need, they're like rear mech hangers with the number available!

Thankfully, the GRX levers played very nicely with the 9sp rear mech so I was fine on that front although I was prepared to buy a GRX if needed. Everything else was no problem and the LBS did the rebuild, mostly cos I couldn't be bothered with the internal hose routing and bleeding! While everything was out, i used the opportunity to clean and polish the frame and parts, put new bearings in, give it new bar tape etc. Was like a whole new bike when it was rebuilt! 🙂
