Do these work with mtb brakes and shifters or only with road style brakes?

If so which ones are a good choice?

There is no such thing as a 'monstercross' bar per se.They vary from very swept back flat bars to slightly flared drop bars (and everything in between) depending on your taste.Some work with mtb controls (the flatter ones),some work with sti's (the more road ones...although not Luxy's).
Salsa do 3 versions alone in the Woodchipper,Cowchipper and Cowbell!

My bars of choice would be Genetic Digest.

Because of ergo counter-drop both comfortable on the hoods and on the drops.

A bit too deep to be perfect one, but none other available on the market offering ergo counter-drop.

It's looking like if I want a back swept bar then I'd be fine with mtb brakes and shifters but anything with a drop will need new levers/shifters!

FWIW road STIs work fine on Luxy Bars, I have a pair of Soma Junebug bars on my Kona Jake and run Luxys on my Gryphon which is a drop bar MTB rather than a monster x.

Yup, I'd say so! Salsa do a couple, Answer 20/20, Jones, Titec (?) On-One OG + Mary

I ran flipped Mary bars on a rigid MTB for a while (mtb levers) and taped them up like drops. Pics from before I taped them...

It was pretty cool like that but now has normal bars and suspension back as I have a proper CX
