I've got a 10mm stem on my Mondraker Foxy XR with 30mm of headset spacers, I think I might be better off with less but because you have to cut the steerer down I'm nervous to do it as I can't go back. I'm interested to know what other people are running on theirs?
Can't you just move some from underneath to above the stem until you're absolutely certain you've got it at the right height?

Can you try it with higher/lower rise bars?
Bars only have 10mm rise as it is, I suppose if I took a spacer out and didn't like it I could get bars with more rise but its an expensive way of experimenting, I'm keen to know if anyone has an experience of the best number of spacers to have on the foxy?
get a cheap flat bar and see how it goes, if it's good then do the chop
That's what I was suggesting yeah, worst case if you do go too low you'll have to buy a new bar.
May or may not be any use - but have you seen the new pacenti bars/stem? (link on the right) Not sure when you'll be able to buy them though.
