I used Snowcard for insurance for an Alps trip, you can customise the cover a lot and they seem to be one of the go to companies. Think it was about £70 quid for a week so not exactly cheap but probably worth having decent cover.
Slick rock is a bit meh once you have done the practice look it's a bit repetitive (as the locals described it it's the oldest not the best though you will ignore us and go do it anyway ;))
Do a quick pub crawl and get all the free WiFi codes from the bars

No idea about insurance, used whoever Cycling UK offer but since I didn't claim I don't know how good they are.
Ride The Whole Enchilada (preferably twice). Also do the trail that runs parallel to the main strip. Start it from wherever, climbing as far as you can be bothered out past the Lazy Lizard, then turn around and descend back into town.
If you get a bad weather day, Arches National Park is good to drive through.
Whole Enchilada will still be snowed in at the top at this time of year - you may get lucky and be able to get a shuttle to Upper Porcupine Singletrack
The Whole of Mag7 and then down the portal at the end is a great ride to do at this time of year - its a long one though
Hymasa and Captain Ahab is a great ride (Even better coming down Ahab at Night)
The trails up at DinoFlow are really nick singletrack trails , pipe dreams got some of narrowest singletrack , navajo rocks figure of 8 is great.
Take your lights and ride slick rock trail at night - its a hoot - plus no one will see your walk of shame up the really steep bits with your limited 1x gearing....
Trailforks and MTB project have all the trails in GPX format
Dont foget to head over to fruita / Grand junction for more singletrack trails

We use Yellow Jersey, not had to claim and hope we never do. I know someone who had to claim whilst in South America and was sorted straight away.
Had to move from Snowcard and then Dogtag due to age loading the policy's
+1 for a slickrock night ride. We just did a bit but it was great at night. Arches is good, but gets busy. As you are staying local you can go early or late. Food is good there too. A bit pricey but plentiful. Moab Diner is good for breakfast. Woodys next door is classic dive bar with a chap at the back doing superb barbeque food. If you are flying in to Denver its a nice drive with a few interesting places on the way
