Its nowhere near as bad as that, although the routes are less well known, so worth getting a guide.
Ive been mountain biking to Mallorca a couple of times now, most recently we used www.Tramuntbike.com for guiding. We did their 3 day trmuntana end to end off road ride, it was really good, no issues with us as a small group (4 of us).
The riding was the usual rocky tech stuff.
He also does van assisted uplift days etc if that's more your thing. And can hire you a decent full suss bike if you need one. He also does road biking tours if you fancy some of that.

I'd go back again.
+1 for tramantuna tours, did the uplift day - 2/12h down Barranc de Biniaraix on a Trek Slash - great fun
On the other side of the island try roxybike in cala millor - son servera and aubarca are fun up-down single track day rides (other riders will be german so plenty of lycra action)
