Im looking to lighten up my whyte t120s a bit more, so far ive done the wheels, stans on hope2's with nobedd nics. I want to keep it strong enough for gravity enduro stuff, not full on DH or FR but im deffo not into giving it a 1995 xc super light snappy alloy cheap cheap crazy light build.
carbon monkey bars look like they would fit the bill, but are they strong enough? what stem do people use for this sort of thing?

tbh, the difference in weight of carbon bars over alloy ones is pretty marginal.
Without knowing the rest of the build it's difficult to say what else to change but if you're doing 'gravity enduro' then saving 70g for a £100 spend on carbon bars is probably not going to make a major difference.
Tyres would save a bit of weight something like some racing ralphs
