I don’t know if this is still a thing but I used to be to race previous routes on an old Garmin Edge (I could see how far/behind I was on my best time) is this still a thing that’s till available on bike computers?
I've currently a Wahoo Element, is there a way of doing it on that or an app on my iPhone?

No, i can't imagine enough people would ever need such a thing to make it viable.
If you have a paid Strava sub, plenty of gps computers have a "live segments" feature, where you can choose to compete against your PB on starred segments.
My Lezyne still starts this feature for my old starred segments, even though I've not had a paid sub for a while.
@mos Why? It would be great for training and making your ride a bit more interesting if you could race your best time. I only used for road riding though.

Not sure if you're joking or not - but that's pretty much a description of Strava. Which is hardly an obscure / little known application / ecosystem. (It's so ubiquitous that it opens the possibility that you're trolling - like asking if anyone else is thinking of using pneumatic tyres or something).
You can probably get what you want with a free Strava membership and the app.
I use it and enjoy it.. - I know that Sundays ride had about my 37th out of 85 fastest time down "Boglouster South Descent".
Just seen you have Strava - I've previously added segments that cover whole rides. That may do what you're asking. It also detects repeated routes and tells you if you're trending faster/slower on them.

Make the whole route a big segment! Or at least most of it to save on the start/finish faffing and tyre pressure checking bits

No trolling here, I’ve hardly used Strava to be fair, just managed to get at free sub. My old Garmin would show how far ahead or behind I was in feet/metres that’s all and I thought how could I do that again without the Garmin Edge

Giant, probably private starred segments, will do the trick if you ride the exact route.
I know what you mean OP, there used to be an average speed or previous ride dot you could chase. Like dot watching in a long distance race. I've never had an interest in Strava but I liked that Garmin feature, used to love beating my old best rides.
