Does it need to be an app? Fitocracy is a good site for tracking stuff. It has a game element too which can be fun - you get points/achievements for the exercise you've done.
Before I bought a Garmin, I used to use the Cyclemeter App to log all my rides. I liked Cyclemeter, as it allows you to upload all rides to the www.dailymile.com website.
I use Cyclemeter, really reliable and has stop detection.. Syncs with Dailymile which I'm not so keen on but gpx can be exported easily for import to another site.
I use 2 Mainly.

Do you train with your iPad?
Lol no I take my iPhone with me as a phone, but was wandering if I could use the iPad when I got home to log progress, I may have to do a bit more research though as whatever tracks on the iPhone won't automatically update on iPad d'oh!

+1 for cyclemeter. And dailymile keeps tabs on how many doughnuts you're burning off (no, really, it converts calories burned to doughnuts!)
