I know its a matter of opinion mainly but would you say the 2.5WT is a fast on/off the road for such a big tyre?

I would say it’s not fast rolling no. I’ve got that tyre in 3c on the front and it’s really trippy off-road (as long as no thick sloppy mud) but on the road it roars a lot. That said it’s on a 32lb ish enduro bike so road riding isn’t it’s forte!

In terms of comparison it’s broadly similar to the 2.35 Addis soft Magic Mary on my other bike - but both are worse rolling than the 26” /2.4 On One Chunky Monkey I had on my last hardtail.

Compared to the Shorty 2.5 WT 3c exo I have on the front of my bike, yes. Which once again, is significantly faster than the shorty 2.5WT DD Maxxgrip I had on before it.

For an 'enduro' type tyre, its a fast roller up front.

Would you say it’s an improvement over a magic Mary trailstar 2.35 29”

Not sure if 2.3 would be better as there is a lot of mud round here

I used to run 650b dhf 3c 2.6 and I found it a blindingly good tyre in all conditions and it rolls well however I don’t want to assume the 2.5 29er dhf will be the same

Mine (2.5 Maxterra on a 30mm) definitely feels like it rolls faster than the MM 2.35 Evo that I use on the same rims. It's not too bad, but it's definitely not super fast.

I would say that yes, it rolls faster than a MM Trailstar.
