Hey i have a cube ltd race 2012 that i am looking to tour up to go away for a week every now and then.

Will the current spec hold up to the added touring weight and will i be reliable?

Looking to add frame bags, special saddle bag (very big)
Top tube bag and a bar bag. (All relevate designs bags)

Not interested in panniers as i plan to ride the welsh / scottish trails once i arrive and so would just remove the bags i have. Hence why i want to do it on a trail able bike too 🙂

Fox float 32 100mm forks
3x10 changing to 1x10 currently
SLX Shifters
Shimano 595 brakes
Xt front & rear derailleur
Just bought ergo grips and new flat pedals.

Weighs about 12kg at the moment

Offroad touring on ride with your gear on the road, remove bags etc then go ride?
If so it should be fine, I'd consider swapping to road / slick tyres if you're doing a lot on tarmac though as it'll eat your knobblies!

can't see why not - I would stick with the 3x10 for touring though! - have a look here if you haven't already - there are some quite interesting ideas and solutions most bike types http://www.bikepacking.net/category/individual_setups/

Basically plan to do off and on road touring and upon arriving at trails remove all bags, put nobblies back on and store the junk in a b&b ect.

Plan to be doing it this summer so will be doing some camping.

You may want to add some air to the forks when loaded up, but other than that it should be fine.
If it can take abuse at a trail centre then it should be fine loaded up!
