This is all new to me having had standard triples, doubles etc.

New bike has this chainset -

What chainrings can I fit? Do I need FSA or is 'direct mount standard' really a standard, and anything that mentions direct mount will do?

(I'm after a 30t oval if anyone has recommendations)

There is a SRAM, Race Face Clinch and maybe one more and maybe SRAM have updated theirs

They do at least list FSA part numbers, there is also a different offset for some depending on your BB 😉

No 'Direct Mount' is not a standard. Each manufacturer has their own direct mount standard (SRAM, RaceFace, FSA, Shimanpo) and there is not one overall standard that they all use.
