I've been using stainless inners for the past few years. Is there a 'better' alternative? I run full outers. And whilst I'm asking, any suggestions about where to obtain a nice new roll of outer?

Look at http://jagwire.com/products/inner-wire

Since you're already sold on stainless, disregard the galvanized ones. That leaves 3 uncoated stainless, and 1 teflon coated. As far as the stainless ones:

Basic = plain stainless cable
Sport Slick Stainless = stainless cable drawn through a die to smooth the surface
Pro Teflon-Coated = same as above w/teflon coating. (some don't like this as the coating can come off and hurt shifting)
Elite Ultra-Slick Uncoated = even more smoother

My preference would be Sport Slick Stainless (or other brand equivalent) as best cost to performance ratio.

Shimano SP-41 housing is felt to be the best by many folks, myself included.
