I'm looking at a new set of XT disc brakes; they're described as I-Spec compatible which, I'm afraid, means nothing to me.
I just need a standard set of brakes and have standard shifter; will there be any issues with these?

No issue. Just means you could fit I spec shifters if you wanted. There will be an extra hole on the clamp.
