Can I use any of these to run a 180 disc on a  post mount Rock Shox fork and a 160 disc on a rear post mount frame?

Shimano brakes.

I have no idea what the letters mean in the description.

Are yr brakes post-mount too ? That adaptor link suggests they are

What fork ? (some RS forks, like Lyriks, are 180mm without any adaptor)

Brakes are post mount and forks are rebas.

REBAs, I bet you do need +20mm
CPS are the swivelly washers that some brakes are designed for
OIS - presumably those are IS tabs (like older brakes with the bolt perpendicular to the "line" of the wheel/rotor

For the forks it should be the post to post 20mm and the frame may be the same but it depends on the frame which could be 140, 160 or 180 or something else. I realise they are cheap but don’t forget the postage and variable lucky dip nature of buying from Planet X plus you may next be asking what bolts you need because the adaptors didn’t come with any

So yeah I'd just buy some from CRC or wherever, that actually come with bolts.

I've got bolts galore, so that's not a problem.

Have measured the back and the calliper needs moving 10mm from the frame. Anyone point me in the direction of what I need?

Are back and front adaptors different these days with post mount?

You’ll want the post to post 20mm again. 20mm more diameter = 10mm more radius
