… but why did no one point it out?

If you put the bike in a low gear it gives you just a bit more room between the bikes on a tow bar / wheel support style bike rack.

Obvious once you know.

Is low the bigger cogs at the back (an easier gear)? Or is low due to the size of the cassette rings and the smaller ones are lower?

Sounds like an excellent tip, but I'm clearly too thick to understand it as I never thought of gears like I think of them in a car...

I'm going with biggest ring out back, it'll move the mech in. Hadn't thought of this before, not sure it's an issue on my rack but will try it next time!

Yep. Big cog moves the derailleur towards the wheel.
