Got a new disc frame coming , pretty competent with most mechanics on bike including wheel building , but have never fitted hydraulic shifters. Probably go for R7020 shifters , the frame is a small , so not sure if cables supplied will be correct length . Is it straight forward , what specialised tools are required , thanks in advance .

Make sure you know if the frame fits flat mount or post mount calipers. Eg Shimano ultegra are flat mount and wouldn’t fit a specialised diverge.

In terms of the OP’s question, the hoses will probably be too long/ needing cutting down. You’ll need hose barbs and olives if not supplied with brakes - usually you can do this without need for bleeding, but sometimes you’re unlucky. Look on YouTube for how-too videos
I've never done a clean install on a road bike, just bleeding when shortened hoses. For Shimano you'll need that little bucket thing that screws into the hydraulic port on the shifter and you'll need a syringe kit with the correct fittings to screw into the caliper to pump in the fluid from the calliper end upto the level. I think SRAM still uses the dual syringe thing with one at the caliper and one at the lever. Also check you have enough of the olives and inserts, caliper blocks and you might need one of those vice blocks to help you fit the hose insert but that all might come with your brakes.
At the end of the day it's bike mechanics so isn't isn't rocket science and really really easy, you just need to be methodical about it so do your research upfront so you understand the process for your setup before you start. If. you can build a wheel this is Childs play. People struggle usually if they've done something wrong and don't spot what they've done and start chasing their tails. All you're doing is filling a hose and couple of hydraulic pistons with fluid.
