Dumb question alert.....
Do the likes of Sram or Shimano come as options without gear levers? Or do you always get them included? If so, what do you do if you have a 1x set up, do you end up with a redundant loose shifter on your right hand rattling around?
Anywhere selling these as sets (L&R) for 1x bikes or is it just buy either end separately?

Yes. With SRAM, you can remove the shifter if you don't want it. With Shimano, you can't, and only GRX has a 1x option.

Both options are available. With Shimano you can have no lever, a dropper lever, or a gear lever on the LHS.

They don't rattle around, it actually works fine just not to connect the shift cable.
If the concept of being able to push the shifter with no cable pull bothers you then you can put a short bit if gear cable through the shifter and use something to fix it in place so it locks the shifter.
It's never ever bothered me though and I can be a bit fussyb about such things normally.
