I'm using my old Chris King ISO rear hub on my cyclocross bike but it won't take an 11spd road cassette. I got some Shimano hydraulic road discs and shifters and using Shimano 105 for the rest (mechs and cassette).
I've just left one of the small cogs off the cassette and it works fine as a 10spd (using a double up front).
I'm wanting to ditch the double chainset and go for a single ring at the front, with a wider range cassette.

What 11spd MTB cassette (and mech) will work with 11spd road shifters?

Just run a Shimano 11/34 cassette and your existing mechs.

wolf tooth make a thing that alters the cable pull at the mech to achieve what you are after.

If you have a mtb mech already, wolf tooth tanpan will make it work with the shifters. This is the setup I have from before the days of grx providing useful mechs.

If you don’t, a grx mech should handle a mtb cassette

Yeah, as above. Lindarets/Wolftooth Tanpan with an XTR 11-40 cassette will work just fine.

I ran this on my Litespeed with Shimano R685 shifters and XTR M900 rear derailleur and cassette.

I still run XTR cassettes with a lot of my road gear as they play nicely with GRX Di2 and are quite light.

a Jtek Shiftmate also does a similar job of changing the cable pull for you.

Looks like perhaps a Shiftmate 8.

Currently running an 11-42 11spd cassette with an Ultegra RX rear mech and a Dura Ace bar con it works perfectly!

Another option is a Goatlink/Roadlink to extend the hanger and allow you to use a standard road mech with an MTB cassette. I'm currently running an 11-40 with a 105 mech and Roadlink and the shifting is perfect. If I were doing it today I'd go GRX mech (no link needed) or at least an Ultegra RX for the clutch.

As above the answer is a road mech possibly with goat link

How big a cassette do you want? My 11-40T works fine with an Ultegra mech, even with out a Roadlink. I suspect 11-42T will work too but I haven't tried it.

Numerous bodges above may or may not work.

A GRX RD-RX812 rear derailleur is the proper answer
