When I have taped up normal rims for tubeless I take it right to edge of the rim and it normally works.
In the Hopes, there is a recess in the rim ( channel) either side. So do I leave that free and gorilla tape up just the centre part, or do I go right to the edge, and tape over the channel?

For sealing, just the centre worked fine for me - gorilla, Stand and Orange Seal tape at different times. If tyres are loose at the bead (unlikely) apply more to the edge.

I put one wrap of Gorilla tape on one side up to the rim edge and another on the other side. So two wraps total.
Hope 35w with 3" Nobby Nics. Went up and have stayed up fine with 120ml of Stans fluid.
I believe on modern rims all you need to do is cover the spoke holes.
I always do the whole width, normally us inner width+5mm as a general rule for tape width (allows for curvature of the rim bed and stretch)
Just doing the inner width can work, however it has a huge amount more potential for leaks.
I have done a few sets of Hope 35W full width tape and they have worked perfectly.
23mm Gorilla down the middle worked perfectly for me.
Middle section (over the spoke holes only) for me and so far no issues with both a 2.8” & 2.6” Minion.
I went belt and braces when I set up a mates Hope 35's. It was his tape anyway so one wrap to the left, one wrap to the right and one wrap straight down the middle. Fitted tyre and tube for a couple of hours whilst faffing with other stuff to press the tape on good and proper. He's currently running Minion DHF2.5 on the front and 2.5 WT Aggressor on the rear. After removing the tubes etc.. both went up a doddle with a track pump and he's had no issues.
