Anyone got any deccent recipies they know please

Home made flapjacks rock:

275 grams oats
100 grams butter
100 grams soft brown sugar
1 tbsp of Apricot jam (diabetic)

Add to this as much dried fruit, seeds and nuts as you can lay your hands on in 40 gram servings. I typically use apricots, dates, sultanas, cherries, coconut, walnuts, pine nuts, sunflower seeds, dried cranberries the lisy goes on.

1: Preheat oven to 180c.
2: Grease baking tray. Doesnt matter on size depends how you like them.
3: Slowly melt the butter and sugar on a low heat.
4: Mix fruit, nuts and oats.
5: Add jam to this mix.
6: Pour butter/sugar over the fuit, nuts, jam & oats mix and mix in well.
7: Transfer mix onto baking tray and with a palate knife (best I find) mark where you want to cut them once finished.
8: Bung them in the oven for 15-20 mins depending on how brown or soft you like them.
9: Re-cut with palatte knife once out of the oven.
10: Place on a wire rack to cool.

When you go out riding take a couple with you and they'll do you proud 😀

Bread pudding 😀

Use this recipe as a general guideline; you can pretty much improvise with whatever you have. You'll never through stale bread away again.

Although better in colder weather as the chocolate gets a bit melty in the middle of summer!
