I'm building a bike for the first time, a 2021 Keplar Disc (when it arrives). I seem to be going around in circles with the groupset and would appreciate some help.

My budget is about £500 for the groupset. I've been recommended GRX or 105 for drop bar setup and Deore or SLX for flat bar setup (considering both). It will be used for a mix of road and gravel riding, roads normally with gravel trip interspersed so I think I'd need a bigger chainring with a wide range cassette. Does anyone have any experience building a road/gravel bike and have some advice about what I should go for?

Any of the above will be fine, it’s just finding the config you want. There’s far to many words written on 2x v’s 1x but I’d suggest the general consensus would be for more road oriented work go 2x, off-road you want 1x.

Great, thanks! Do you know if it is possible to mix and match the sets. For example, would a GRX rear derailer work with a Deore shifter?

But as far as I'm aware, you can't mix & match road vs MTB - the shifters have different pull ratios. If you want to get fancy, you can buy adapters to change the ratio and make it work, but always seemed like an extra thing to go wrong to me.

I hear that the GRX shifters are worth it for off road (ergonomics wise) and will probably be on my next gravel bike.
