I have a pair of 2014 Fulcrum Racing 5 cyclocross wheels, its raining,the shed is warm, and I am thinking, can I convert them to tubeless?

I did my Hope's with Stans and over a year on, all good.
Or do I use Gorilla Tape? How good is it?

My experience with gorilla tape is eventually it soaks up the liquid, stick with stans / Tessa.

As long as the rims are some variation on tubeless compattible then its no different to disk wheels. If not and there's a particulalry deep well in the rim with no shoulders due to the brake track it might be more problematic.

Chhers,I think they are designed for tubes, I will have a look later.
Its still raining here, so may have to go into the shed.

I sometimes find that adding a lot of electrical tape in the well gives the tyre something to push against on non tubeless rims.
