Going to get rid of my outer chainring and go granny and middleburn middle ring only.
Will I need short bolts to hold the middle ring on an LX crank?

Or you could pack them out with washers, or fit a bashring. 🙂

I have tabs made from cutting off the bolt-hole part of an old big ring.

Or just file the nuts down...

Washers are the (cheapo) answer. You may need to file one side down to fit LX cranks depending on the dimensions of the washers. An electric 'grindstone' makes it a quick job. Make sure you hold the washer with something other than your fingers ..
Else take a hand file to them
