I fancy building a FAT bike to try in the snow, any ideas which hardtail frame offers enough tyre clearance to get a 2.7 or even a 3" tyre in?

Surly 1x1, stick a Pugsley fork on it and you can have 3" at the back and full fat at the front.

IIRC Inbreds can take quite big tyres?

They can but not a Gazza 3.0 in 26" but the 24" version does fit. Maybe the 26" would fit a 29'er Inbred?
I've just managed to fit a Michelin 2.8 in a Kona Stuff and I think that would also fit a 456 but haven't tried it yet,
