I know the 'R' version of Fox forks only have adjustable rebound damping, but do they actually have high and low speed compression damping too, just that it's not adjustable? If so, could this be tuned by altering the suspension oil?

Yes you have shim stacks inside the forks that control the compression, and yes they can be adjusted.
I can sort this for you too 😉

By a strip down of the damper presumeably?

Yes and with a bit of reshimming, removal or adjustment of the hydraulic bottom out.

Out of the box, I assume they come pre-configured for an average weight rider+bike (85kg?) who rides with an average amount of compression damping?

So you only need to think about adjusting the shim stacks if you weigh significantly more / less or prefer to ride with more / less compression damping?

They will be set for 'joe average' weight and riding style, if you going really quick or doing big stuff a tune will get them working better the same goes for if your really light.
For general riding if your an average weight they should be pretty good, but as with most suspension if they do or don't do something you don't or would like them to do they can be adjusted to suit.
The main thing is to get them set up properly in the first place, correct sag and rebound settings, once they've beeded in from new and you've been riding them for a while then is the time to assess whether you'd like them tuned.
