I've borrowed some am7 shoes and they feel too grippy.
Coming from egg beaters where your feet can rotate on the pedal stroke having them in a set position feels weird.
Is this something you get used to?
My trainers aren't as grippy and I seem to be able to move. Guessing this isn't necessarily a good thing.
Why are all flat shoes lace ups? I miss quick velcro closures and muddy laces are rubbish.

odd at first, I had the same coming from SPD. you'll either get used to it, or get subconsciously better at putting your foot on exactly how you like it.

Correct - especially if they are more off roady trainers with a bit of a tread to them. Not only is it worse, you'll wreck them in short order. Plus you'll join the crowd of people who manage to hit their shins on their pedals while riding.

AM7 or GR7? The AM7 is the SPD one, the GR7 is the flat pedal one.
I'm just starting riding flat pedals too, I'm using DMR Vault pedals and Ride Concepts Hellion flats.
The RCs are apparently stickier than the Shimano shoes and I found the same thing. It's hard to micro-adjust foot position without lifting the shoe off the pedal. You do kinda get used to it and learn to adjust.
If you want "not laces" look at the Specialized GR9 (big flap over quick laces), Crank Brothers (Boa) or Specialized (Boa).

Yes, just as with SPDs (and other cleats I assume) you get used to clipping in \ out quickly without thinking about it.
What can be harder to get used to is having to ride out a fast rocky descent with your foot in a less than ideal position as you don't want to put the cranks in a 12 \ 6 position or sit on the saddle to allow yourself adjust your foot placement.
