I'm looking for light (plastic ok) flat pedals with very shallow pins with decent bearings.

Why are you after shallow pins? The superstar ones normally come with short or (enormously longer monstrous) long pins. I always go with the shorter ones - but I don’t know if that makes them shallow or not.
I think the pins on my Carbon Cycles Exotics are a touch shorter.
If you turn the pins in vaults over they are quite short. That's how I use them
Those shimano flats look like something you'd get with a 200 quid bike.

All Shimano pedals come with the pins in short set up with washers behind the head of the bolt. All alloy though including the new ones.
Most plastic pedals come with replaceable pins - try to source washers to put behind them to shorten them, or just cut them down?
Those shimano pedals look gross, and also like they won’t work very well at all.
The new Shimano pedals are aimed at leisure riders not MTB.
The cheaper of the Nukeproof plastics might suit you. The pins aren't long but also the shape of the pedal means they don't protrude as much as others

Yeah, there's a version 2 of the metal ones just coming so hopefully there'll be plastics as well. Though tbh anyone that wants to sell an expensive pedal probably shouldn't make a better plastic one for less 😉
