I have never replaced an internal cable before. Have watched a view how to videos on YouTube and looks like I need to get myself some hollow plastic tubing, so where do I find this and what size do I need to buy?
Ask at your LBS as it comes installed on many bikes and frames and is often pulled out and chucked when the cables are installed. Sometimes sucking a cotton thread with a hoover can be easier - attach the end of the thread to the liner or cable. Some frames are easy, others a nightmare - I once took a day on a bike with fully integrated cabling, hydro hoses, integrated stem and handlebars - SRAM AXS is easier! You can also get a tool kit with a cable and magnetic ends which can help.
ebay, mine's 4mm x 2.5mm ID and is fine but it could be smaller. Run it over the existing cable and then remove again once the new cable is through
I've also had success with a strong neodymium magnet, with carbon and Al frames to guide the cable to the right place and then a dental pick to get it out.
Had to do the trick with a thread (of dental floss) and a hoover on my transition Sentinel. Nightmare job!

If you've a full outer, just pull out the old inner and put in the new inner.
But if you also want to replace the outer:
- leave the old inner in
- remove the shifter cover
- snip the inner at the bars
- remove the end of the cable and nipple
- pull the old outer off upwards
- cut the new outer to the same length
- push the new outer in from the top while securing the inner at the mech
- once through remove old inner and slide the new one in via the shifter
A bit fiddly but worked for me.

I would check your bike manual first. I tried as intheborders says above (seemed foolproof) and the cable kept snagging just before the exit hole in headtube. Downloaded the manual and removal of the fork was essential for this last part. This was for a Specialized Epic Evo.
I find every bike is different - and therefore each one requires a different approach.

Depends on the bike to a huge extent. Some frames/people just seem to make it easy.
I re-did the brakes on my scandal a the weekend and just poked it in one end and used the natural curve of the hose to jiggle it out the hole at the other end.
The same trick works with gear cables, or if not, thread the inner cable through having bent the end to a 90deg 'hook', and use that to find the hole at the other end, then thread the outer over it.
Second one for the do it 2 stages approach. Replace the outer without removing the inner and then thread the new inner through the new outer. Just dont remove them both at the same time or you could be occupied for some time
