I am thinking of fitting some of these to my Specialized Hardrock:

Bike will be used for light touring, commuting and short off-road rides.
I would like to fit full mudguards (e.g. SKS), but wondering exactly how I will attach them. I presume they wont have dedicated mudguard mounting points, but would I be able to fix them to the disc caliper mounting points? I will be keeping my V-brakes, so the disc points will be unused.

there will only be a disc mount on one side. The only kind I can see you being able to fit are ones that attach to the crown of the fork or through an insert into the bottom of the steerer. I wouldn't go strapping things to the carbon legs as any grit that gets in there will quickly abrade through the carbon fibre with the vibrations.
edit - why not go with something like a Mucky Nutz fender bender and a downtube mounted mudguard?
Zip ties work well for me for sks guards on forks with no eyelets. Zip tie through the mounting hole on the guard and wrap round the fork leg. Do similar for the crown mount, but poss use 2 zip ties to make a cradle, and a third to attach to the cradle.
Not mudguard related, but I've just bought a set of the 29er carbon forks from Exotic. For the price they are superb an ride so much better than the steel rigid forks I had before.
actually if you do that route (good idea) then get a bit of 'heli tape' - ie PU tape and stick it all the way round where you are going to put the cable tie. Will cost a couple of £ for a small bit and protect the forks.
go to ebay and search for;
MIKALOR W4 304 Stainless Steel Rubber Lined P Clip Pipe Retaining Hose Tube
they do every diameter - you just need to get the right one for your fork.
The rubber lining protects the fork and stops the guard slipping.
