Did you stick with 50mm stroke?

still as engaging as before as in needs to be ridden not a plough machine ??

Still get a bottle in ok??

Yep 50mm I looked into 57mm but a lot of people on mtbr found the frame would start to collide with 57.

You can set it up however you like, I like the 5010 to be really playful so have it set as follows for my 72kg rider weight:

30% sag
190-195psi in bladder (170-200psi range so this is fairly high, with the psi maxxed the rebound was too fast when going deep into the stroke)
0 negative bands (holds it up in its travel, using 1 makes it more plush)
2 positive bands (helps with end stroke ramp up).

You can of course run less sag to get the same playful feel but I found keeping it at 30% and experimenting with tyre pressure gets the small bumps feeling good, it's never going to be a plough bike though as we only have 130mm travel 🙂

I can't get a bottle in but that's because of my bottle mounts (fabric cageless mounts don't seem to work on the v2, they were fine on my v1 5010). But I don't see why you wouldn't be able to https://imgur.com/4z9RjNi
