OK, Bought a 3x10 SLX groupset, building up a Latitude.

Thinking I want to change it to a 2x10 and bung a bashguard on. Never done this before, always just gone out on a 3x9 or 3x10 and snapped the odd tooth off now and again.

Will I lose much weight doing this? Also, is it just a case of un bolting the big ring and bolting the bashguard straight on?

No.
Yes, make sure your chain ring bolts are long enough.
You might want to change your middle ring for something a little bigger. I went from a 22/32/44 to a 22/36/bash.

Ah good call. I also went for the 11-36T cassette option hoping it would widen things out a bit...

Any tools on the net for plugging in combinations to see the ratios etc?

I tried sheldon brown, but it doesn't include new 2x10 combos.
My new bike is X9 2x10 with a 11-36 & 26/39. I like it, lose a little bit at the top & bottom, but not really an issue.

22/36 is quite a jump. I prefer 24/36 myself.

With an 11-36 10spd cassette, you've still got a ridiculously low first gear if needed, and the 36T outer is enough for almost any occasion to be honest. That's what I run on my full sus bike anyway.

On my Genesis Altitude, I run 1x10 with a 32T ring and an 11-36 cassette. It's light though at sub 25lb, and I can stand up and grind out on the climbs a bit more, and just spin like a loon going downhill if I need to, but losing the front mech is to me, a godsend!
