I've stuck them in the machine and they are 'clean' but the white leather is now brown leather. any tips for removing the stains and making them super minty fresh again?

Are you sure they're leather? Most bike shoes these days are synthetic so simply get at them with a brush, warm water and detergent and they'll probably come up like new.
Kitchen cream cleaner (not sure if you can get mint versions, might have to be lemon fresh). Like the toothpaste its slightly abrasive so try on a small area first to see if it takes any coating off.
Could try Vanish or bicarb made up into a paste.
good point, maybe they are faux leather. What detergent? stuff you stick in the machine?
Ideally I'd like to use what is around the home. Bicarb may well be worth a try, or toothpaste! Just use it on a toothbrush with a bit of water huh?
