I've got a 140mm pitch but this sometimes feels overkill and a 100mm Trek hardtail but this I think a 120mm ex would be more fun. I ride trail centres like cannock most weekends and a lot of off piste stuff. My question is should I stay with what I have or should I sell both and invest in a 120mm fuss suss like a Trek ex or something like a Ghost amr and have a good chunk of money to upgrade?

I'm no financial guru but I wouldn't invest in a bike, it's only going to depreciate, rapidly if you actually ride it.

I'd stay with what you have. Cutting 20mm of travel is not going to revolutionise your riding!

Try alternating between bikes or spending some time on the hardtail so the rides are harder. You'll then appreciate the skill compensator more.

I spend a lot of time on a SS 140mm hardtail but when I switch to the full suss it feels incredibly fast.
