My XT wheel set with centre lock rotors needs to be used with hope tech x2 brakes.
My question is
1. Will shimano centre lock rotors work with hope tech x2 brakes
2. Would I be better if buying hope rotors and using a 6 bolt adapter.
I need to be able to use both my wheel sets in both bikes. Hopefully without having to re align the caliper
Other wheels are mavic with 6 bolt hope rotors...
Does anyone know?
They'll work totally fine. All rotors work with all brakes. Simple.

you're likely to be disappointed with this bit.
Even the same rotors/hubs have small tolerance differences that can cause a realignment to be required different hubs/rotors and you'll be realigning each time you swap.

If they are the right size - check for 180 vs 183 etc.

I seem to be fine on Hope ProII's and Hope Rotors for all 3 wheel sets, swap seamlessly.
I would avoid the adapters, the creaks and groans that came out of them really didn't fill me with confidence.

Not strictly true, avoid using Avid Juicys with any rotor with an aluminium carrier (Hope floating, shimano XT etc.) as the rotors foul on the pad removal tabs.
popps, X2 brakes and C/L disks should be fine, however as stated above you may need to realign the caliper. Or, you could be lucky as in mikewsmith's case. Only one way to find out.....
