I have been using a "snakeskin" Nobby Nic on the back but it suffers from constant cuts on the tread (not sidewall) which don't seem to seal well with regular Stans Sealant.  They seal up sometimes but then often re-open later.

Clearly I need a beefier tyre but the next logical step up in the Schwalbe range seem to be Hans Damp Super Gravity which is well over a kilo (vs about 700g for NN) and way more draggy.  Can anyone point me at some happy middle ground?  I want an all round tread pattern like the Nobby Nic but with more protection on the tread. Ideally not quite as heavy or draggy as Hans Dampf SG.  Seems like Schwalbe no longer do NN Double Defence which sounded like it would have done the job.  I've noticed that even the non SG version of Hans Dampf, Magic Mary etc appear to have beefier sidewalls than the NN despite also being billed as "snakeskin".

IIRC it's now called Apex but as you say it weighs a ton. What about a 2.25 Snakeskin Hans Dampf? Like a Nic on steroids but on the right side of 700g.

Or a Rock Razor? The little tread blocks are quite dense and work surprisingly well until the edges go off.

2.25 Snakeskin Thunder Burt? Again lots of shallow but densely packed tread blocks that work surprisingly well until etc etc

Yes looked at Apex but seems it is only available for plus tyres 🙁  Thinking about Hans Dampf snakeskin as they do look a bit tougher but concerned I'll end up wasting my money with the same cuts issue as am already using so called "snakeskin".

Have used Rock razors before and like them but decided I need a more all round tyre for the often wet welsh conditions!

snakeskin isn't very tough, though it's better than the schwalbes without it, which are basically tissue paper

The heavier Grid casing on specialized is a good compromise for me, and WTB tough is very tough but very heavy. >1kg on 29
