Just adjustment my 105 RC7000 shifters down a bit on my Prime Primavera carbon bars (-11 degrees for a bit longer reach and aero-ness in lieu of TT bars - velotec skin suit has been ordered..)
Heard a creak when tightening one of them down to 5 tops 6 nm (torque "flute" from ice tools).
Tried to rip off the bars but they seemed fine and didn't hear more creaks - should I be concerned and do a proper crack investigation? And if no cracks are visible, is it still sketchy (when sprinting?)
Put your old wheels on and you won't hear any creaking.
If it creaks when you ride it then I'd reinspect, otherwise I wouldn't worry.
Sometimes I think it is just the bar clamp settling, I've had it happen a few times, not just on carbon bars
My cheap Chinese bars creaked in my hands when I squeezed the ends together.
I then tried to pull them apart by hand and succeeded (I put a video up here).
This is probably not relevant or helpful but I like to regale it.

Could it have been the bolt creaking rather than the bar. Metal on metal.
I don’t think I’d worry too much, I’ve always been nervous with the shimano torque settings for shifters, it somehow feels like more torque than I’d want to put on them but I don’t recall it ever being an issue. The bars will be designed for the clamping force in that area, the noise was more likely to be the nut against the shifter as you tightened it.
It’s surprising the pressure carbon can take, ive experimented with offcuts of steerers and seatposts in the vice to see how much deformation they’ll take before they fail, it’s impressive, not very scientific I know but it seems a shame to just bin them without some sort of destruction
