Ive currently got some hope hubs which have a qr rear, I want to run these wheels on a single speed, can I convert the axle to the single speed equivalent? I'd obviously need to change the free hub also, does anyone know which parts are required to do this?

if you have the older Hope Pro II hub, you can easily convert the axle to the 135 mm x 10mm "screw-in bolt" setup which is ideal for singlespeed bikes running horizontal dropouts. This kit is still available and not expensive

you can see it here:

You can then use a singlespeed conversion kit to mount a single cog onto the freehub body, but be aware it will tend to chew into the softer aluminium alloy body more than when using a multi-speed setup with spider-style cassette

Hope also did a singlespeed specific version of this hub with offset pawl/ratchets and a shortened, tougher steel freehub body (I believe this would take up to 5 cogs?)

I'm not sure exactly what you are asking.
Converting from QR to bolt in is easy, just buy the correct adapters as esher shore says.

The proper SS hub has got shorter (or narrower, depending on how you look at it) splines where the cassette goes. You can't convert one to the other.

You can run a 9 speed hub single speed though. Just use a SS sprocket and spacers.

Two fine answers, but to build on them, nine speed hub and spacers makes it easier to get a perfectly straight chain, so has some advantages over a SS specific hub.
The older Hope Pro II needed an axle swap to convert to bolt-in or bolt-through (you have a choice) while I believe the Pro II Evo just needs end caps, but might be bolt-through only.
