Im just wondering if i did the right thing today, i had a bit of knocking around my rear shock until i tighted the coil up enough - quite a few turns then it stopped. Im guessing i did the right thing as it didnt seem like there was any issues but just curious as i read that you dont want to over tighten the coil on the shock.
Depends on the coil. Cane creek like 2-6 turns.
How many turns did you do from the coil becoming captive?
Tightening the spring = increasing preload. Do you actually want/need the preload increased?
I originally tightened the coil on with the top nut until i couldnt physically turn it by hand anymore, i then had to turn it by the spring. But to get it to stop knocking i have had to turn it alot more than 2-6 otherwise it feels like there is play in the frame

That sounds like too much, if it's engaging - then you can count the turns after that for how many turns of pre-load your're adding.
Are your bushings in good shape? if you pick the bike up by the toptube, where it meets the seattube, can you feel a slight knock?
Have you got the end of the coil lined up, so it's opposite the spring clip?
