Why oh why !!!!
They only round off if you're hamfisted. Fit with grease / anti-seize, make sure the head is completely free of crap when you come to remove them so that the allen key is fully engaged.
Torx + hammer then gently twist out.
I always fit with threadlock these days rather than grease. As well as preventing them coming loose it also prevents them seizing in place. Never had a problem since started doing this..
Coppaslip and don't overtighten
Ref getting the stuck one out - a slightly oversize torx bit normally does the trick - hammer it in and you should get enough purchase to remove. Or drill it a bit first then try it.
Dremel a slot and use a flathead impact driver?
Just started using clips, I’m going to head out to the garage and check mine come undone and have enough grease on them!

+1 for weak thread lock. The only thing worse than not being able to remove them is a cleat bolt falling out mid ride.
Best to coppaslip/threadlock to avoid completely but surely they are about the easiest bolt ever to drill out?
Just use a slightly bigger than bolt size drill bit (6mm?, can't remember, just whatever looks right).. there's a convenient circular hole to stop things slipping (your rounded off hex). Drill for a couple of seconds and the head pops off.
Take cleat off then use vice grips to remove the rest of the old bolt (normally easy as no pressure on it) or just use another plate in the shoes (I seem to have a few left over from buying cheap shimano pedals).
As a bonus, you can't damage anything you're not about to throw out as you're doing it.

Depends if you have a worn set of hex keys and worn and/or monkeymetal drill bits?
But as above, copper grease or even better, threadlock, and pour candle or parradin wax into the recess in the sole to keep water and grit out.
+ 1 for a little threadlock when installing, also melt a little candle wax into the hex holes and let it dry then when you come to remove them the cleat holes aren't rammed with mud and crap. Just gently warm and untighten them.
