A few places to rent: ZeroG, LegendCHX and Intersport in the centre of town.

ZeroG is also home to the Chamonix Bike Book, and would probably suffice for a few days riding (can't really recommend a guide as I've not hired one).

Early September will miss the bike ban (August) and lifts start closing in the second half of the month.

I have no idea whether their guiding is any good but I've biked and can recommend most of the trails these guys describe here: Singletrack Safari

As @niggle says, start of Sep is a good time to visit as bike ban stops. More than enough riding with an IGN map and a copy of the bike book. IME (PdS) a single day guide runs around €250. Union laws mean you can't just offer your services if you feel like it. You can try MCF MCF Chamonix
