As above, converting my bike from triple set up (22/32/44t<f> / 11-36t<r>) to a single 34t ring/11-36t <r>.

This is my thinking on chain length > seeing as I'm going from 44t to 34t as the largest ring size, reduce the chain-length by 10 links?

Just measure it like you would if you had three rings. Break the chain, run it around your middle ring and largest cog on cassette without going through derailleur until both ends of chain meet, then add 2 links, if this isn't a hardtail then compress your suspension too then add the 2 links.
