Hi,
I have bought a sonder camino tiagra (50/34, 11-32) but am putting grx on it (46/30, 11-36) using the big and small chain length calculation it should be the same length but as I will never be in big/big should I rake a couple of links out?
I wouldn't. You say you'll not use big/big, but what happens if you do by mistake or not concentrating?
Definately not. Quite aside from the almost certain chance that you will go big-big by mistake at some point, the newer derailleur's run better with a slightly longer chain. I had issues with my road bike and a noisy chain across a lot of the gears until I did some research and discovered it was down to the chain being too short, even though it was long enough to access all gears.
I could explain in detail but if you are interested in the very nerdy reasons why then it's all in this link...

He's talking about road gears in there but it applies to GRX also.
