Just picked up some lovely Syntace pedals and going to rebuild them with new bearings as the current ones are a little rough.
Looking at prices, I can get ceramic bearings a bit cheaper than SKF/Enduro etc so any reason not to fit ceramic?

NTN/SKF/FAG bearings only, tried others and they just arn't as durable. Ceramic bearings cheaper than an SKF, going to be shite quality.

Long story short, steel bearings will last longer than ceramic and you won’t notice any ‘performance’ benefits in pedals anyway.

SKF and Enduro bearings are great quality.

Ceramic bearings are designed for constant load, high-speed industrial applications in relatively clean environments. What it is about this that make you believe they're suitable for pedals?
