It's meant be a nice day tomorrow and I'm planning to celebrate by taking out the nice road bike for the first time this year. Its currently got the 50mm carbon rims on, however I'm a bit wary of taking them out given I'm sure the roads are still covered in grit and salt from last week's Arctic weather.

Not really up on carbon wheel durability, however as they are rim brakes will I be grinding them to dust? If so I can stick on an alloy set, but can't really be assed fitting the tyres, brake pads, cassette  etc.. Not that it takes long, but I'm lazy and would rather not if it's not a big deal.

if the roads are dry you'll be fine, if not you will be mostly fine and i'd worry more about how windy it was

The road salt is more likely to corrode your nipples to the spokes than damage your carbon rims.
