Need to replace my original 2001 XTR cassette (hasn't done too badly for it's age!) but the price for a new one is over £100.
Can I just swap it for a more modern 9-speed XT cassette?

yes

any 9 speed shimano compatible rear cassette will do
Generally the consensus is that the greater the price the lower the weight
Wear seems to be roughly the same
Deore are very heavy so most folk avoid them but they do a 36 in deore only iirc

The cassette will be fine but I think you'll find your wheel size will be well out of date 😉
