can I use my 105 hubs and spokes to build a tub wheelset?
would normal spokes be ok?

Yes, so long as the new rim has a similar ERD

Tub rims are exactly the same as a clincher to build. As above, you'll need a rim of near identical ERD to use your old spokes, otherwise it'll be fine.
