Getting my winter shopping done early and looking for something which will fit over MTB SPDs. They'll be used for snowy club rides and commuting. It seems hard to find any big enough for MTB-type shoes.

Buy walkers gaiters - any cheapo ones will do the job. However, there's no warmth in them so you'll be relying on thicker/warmer socks (which might necessitate bigger shoes).

45North do primaloft insulated gaiters but they don't cover the whole foot. I reckon you'll struggle to find anything that will be insulated AND cover the shoes. Experience in winter riding tells me that waterproof boots, thick socks and cheap gaiters will do the job.
I have a pair of Endura overshoes. Good in the cold. In the wet they do eventually let water in but my feet have stayed warm in the past.
I've also got Endura neoprene overboots and they are excellent. My feet actually get hot / sweat in the things they are so warm
I have not tried them with any of my mtb shoes, but I'm sure they would fit over them no trouble.
Endura ones are the standard option. Get them tight. They work well enough so long as you won't be doing any walking in them, which trashes them pretty quickly.
Bear in mind that summer shoes will probably leak through the cleat fitting unless you seal them eg. bathroom silicone sealant does the trick.

Endura Road Neoprene ones here too. Fit perfectly over MTB shoes and are the same as the MTB version but without the annoying rubber strips around the toes which only rub on cranks rather than do anything useful. Cheap and keep the feet warm and dry through all weathers.
For proper Arctic stuff (-5 or colder) its endura overshoes over mw81s!
Mates with northwave Arctic boots don't seem to have to resort to this. Their season for winter boots is significantly shorter though and I get dry feet through spring/autumn with mw81s
The best ones I've used are the insulated (quilted) Gore ones.
I bought a pair of 'waterproof' Endura ones which were anything but.
+1 Endura and durable for a quick walk to cafe.
